I would also recommend #FullmetalAlchemist, which is one of my all-time favorites and a heavy influence in my work. Despite a veneer of occasional silly shounen humor, the story itself is deeply philosophical as the concepts of power and truth are explored.

Naoki Urasawa's work, such as 20th Century Boys and Monster, should also appeal to a Western audience with a grounded and plot-driven storytelling style. Monster is about a doctor who is wrestling with saving the life of a child who turned out to be a psychopathic killer.

#VinlandSaga is a currently running manga and TV series based around the historical Icelandic character Thorfinn Thorsson. Without spoiling, I'll just say that it's a revenge story turned on its head, with some of the best real-world action and character development in comics.
